Cheap and Delicious ? The Chopping Blog
Recently I?ve had to learn to do something that doesn?t come naturally to me. It?s called living on a budget.
Since moving out of my parents? house and into my first post-college apartment, I?ve had to adjust my spending habits, especially when it comes to eating. As it turns out, I could easily spend more money on eating and drinking than I do on rent, so before I moved, I had to make a plan.
Luckily, growing up eating mostly Italian food, it was an easy adjustment. Italian food is all about cheap and delicious and making things last. Pasta, risotto, polenta, more pasta?all are dirt cheap and so easy to turn into an amazing meal, just add some garlic, olive oil,?parmigiano, vodka and you?re ready to go. One of my favorite pasta dishes to make is Cacio e Pepe, literally cheese and pepper. It is the epitome of simplicity: toss your pasta with some olive oil, butter, cheese (I use half pecorino and half parmigiano), and lots of cracked pepper and you?re done!
One of my favorite meals that is easy on the wallet and heavy on the?deliciousness was taught to me by my former roommate, an expert on cheap and?delicious?food. You buy a?rotisserie chicken (from Hasvestime, which happens to be crawling distance from my apartment)? And then you eat it with your hands. No cleanup, no silverware, you don?t even have to wear pants! Eat it in front of the TV, standing over the sink, or crying in the bathroom.
I?ve attached the recipe for my famous Mauled Rotisserie Chicken so you guys can enjoy it at home!
Ingredients:
1 Rotisserie Chicken
A lack of shame
